Simple Recipes for when you just can't right now. Low energy? Long day? Pantry slimming down? I got you.
These are my actually recipes that i make when I just can't right now. Fast simple and usually just takes food that you forgot that you had in your pantry.
This recipe is easy on your wallet and filling for your family. It only takes a few simple ingredients including your choice of vegetables and meat, I have used Venison in this recipe. I chopped and cooked the meat with chopped onions into my wok, then added any fresh vegetables. In this recipe I used fresh onion and carrots.
Meanwhile, you will need ( for family size) 4 Packs od Ramen, Prepared with seasoning packets and teriyaki sauce, and set aside.
Keep cooking your meat and onion, Once tender I add any frozen vegetable, in this recipe I have added frozen broccoli. I then cook until broccoli is almost tender and then stir in my noodles and add some more teriyaki sauce.
Let simmer while stirring occasional so that the ramen doesn’t stick to the bottom, due to it’s fast cooking. When done serve and enjoy, super simple and all for less than the cost of what you would spend on pre-prepared frozen Chinese meals from the store.
This recipe takes about 5 ingredients you probably might have laying around your house.
You know that week before you are paid, or maybe just tired and don't feel like driving to the grocery store. I know i live an hour away from big stores.
I created this recipe on one of those days, super filling and easy.
I used a couple boneless frozen chicken breast, chopped then cooked it while throwing a ramen seasoning packet i had extra into it.
Meanwhile i put my noodles on to cook i used the medium shells but you can use almost whatever you have laying around. The whole point of the recipe. I boiled the noodles until done and separately made a instant brown gravyt packet. when the chicken was done i added the drained noodles and gravy the brought to a boil and then simmered for a few minutes. Bam easy to make from what's in your pantry on those almost your of food days.
I love this recipe because, who doesn’t have random pie filling in their pantry? I know I always do and my family loves just about anything strawberry. You don’t have to use the brands that I have used, and the granola can be substituted with original oats as well. I just love this brand of granola.
Filling:
Topping:
Directions
Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
Mix flour, both sugars, oats, 1/2 teaspoon cinnamon, and salt for topping in another bowl until combined. Add 1/4 cup melted butter and stir until thoroughly combined and crumbly.
Combine remaining melted butter, milk, and remaining cinnamon in a small dish.
Pour Strawberry filling into the prepared baking dish and sprinkle crumb mixture over top. Pour butter mixture over the crumb topping.
(Now before I put the mixture I actually put a thin layer of my topping on the bottom of my dish, for texture and taste, or what have you, also not necessary.
Bake in the preheated oven on the convection setting until topping is golden brown, 30 to 40 minutes. Serve warm or at room temperatur
A very easy go to dessert or snack of mine is cinnamon swirl bread. It usually takes an egg but I was out so being that is what my recipes are about we are going to substitute today using what I do have, sour cream. You will want about a ¼ of a cup sour cream per egg.
Ingredients
Wet Ingredients
2/3 cup sugar
1/4 cup unsweetened applesauce
1/3 cup vegetable oil
1 cup milk
1 1/2 tsp vanilla extract
Dry Ingredients
2 cups flour
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Cinnamon Swirl
4 Tbsp butter or DF margarine
1/3 cup sugar
2 tsp cinnamon
Preheat oven to 350F, and spray an 8×4 or 9×5 loaf pan with cooking spray. For easier cleanup, you can also line your pan with parchment paper (I also spray, for extra measure).
Melt the butter in a small bowl, and stir together your cinnamon sugar blend in a second bowl.
Keep the butter and cinnamon-sugar mix separate.
Stir together all wet ingredients in a large bowl, and whisk together dry ingredients in a separate bowl.
Add dry ingredients to the wet ingredients, and stir/whisk just until combined. Try not to over-stir your cinnamon bread batter, or it may not rise as well.
Sprinkle little of of cinnamon-sugar blend on the bottom of your pan. Spoon about 1/3 of your batter in pan (this doesn't have to be perfect, I just do it however I feel at the time. I used a square pan instead of my bread pan this time so I did half and half) spread evenly into bottom of pan. Drizzle some of melted butter on top, then sprinkle some of the cinnamon-sugar combo on top of that.
Repeat twice or three time depending on the layers you want, finishing with batter on top. Sprinkle all remaining cinnamon sugar on top to finish.
My favorite part! Run a butter knife through the batter several times almost making zig zags or a few lines or swirls, so the batter isn't over-worked.
1. Bake at 350F for about 50 minutes. For best results, cool before slicing. Trust me it’s a mess if not. I am impatient so I had to train myself to this. Store in container. Room Temp
Optional Glaze – stir all ingredients below together, an drizzle over top of bread:
1/2 cup confectioners sugar
2-3 tsp milk (start with 2 tsp, and add more if too thick)
1/4 tsp vanilla extract
This recipe is less for the protein when I make them and more for the simplicity and the taste. My son loves granola, and these are made from like my other recipes, things left in my pantry when it is time to shop.
I use three cups of Bob's Red Mill Honey Oat Granola
One cup Mrs. Butterworth's maple syrup
One ½ cups of peanut butter
Melt the syrup and peanut butter in a saucepan or microwave safe bowl. Add it to the granola and mix. Using a rubber spatula mix ingredients together. Let the mix solidify in the fridge for about 20 minutes. Then you can roll into balls or put into squares on wax paper.
Four ingredients and so super easy to make.
One pack cream cheese mixed with One package of Ranch seasoning mix.
For easy mixing you may want to soften.
Two cucumbers sliced thinly.
Six tortilla shells.
Warm shells( for easy rolling) , warm cheese (both in microwave)
Spread mixture evenly on shells then layers cucumbers evenly. Roll and cut into 8 Slices.
Refrigerate left overs for up to two days before they become soggy.
